The Amsterdam Market 3-Bean Soup

Visitors of the Amsterdam have definitely spotted the word “gezellig“ above our bar. It’s the Dutch word for cozy. This winter in the market, we want to send you home with a little bit of gezellig. We’ve crafted a 3-bean soup recipe made exclusively with ingredients that can be found in our market. Continue reading below for a simple and flavorful dinner that you can cook yourself in under an hour.

1 large onion, chopped

5 slices of North Country Farm Bacon, chopped*

2 teaspoons olive oil

4 garlic cloves, minced

1 package India Tree 3-Bean Mix

1/2 carton Aneto chicken broth

1/2 can San Marzano canned tomatoes, cut up

3/4 cup salsa (we recommend Dreams Aren’t This Good - The Fighter)

2 teaspoons chili powder

1/2 teaspoon pepper

1/4 teaspoon ground cumin


  1. Soak beans overnight in water. There should be enough water in the pot to cover the beans by about 4 inches.

    (I quick soaked mine in a pressure cooker on high for 25 minutes)

  2. Cook bacon in a medium-large soup pot. Remove meat and reserve, keeping all fat in the pot.

  3. Cook the onions in the bacon fat and olive oil until tender. Add garlic and cook about 2 more minutes.

  4. Add the remaining ingredients and bring to a boil. Simmer without a lid until the beans are tender and the soup is to your desired consistency.

The bacon can be completely left out if need be, just substitute the bacon fat with more olive oil. In fact, this can be easily made vegan with veggie stock. I like to top mine with a little grated Parmesan cheese, but that’s up to you.
